Mezcl\u00e1 muy bien los huevos, la clara, la leche y la pizca de sal en un taz\u00f3n mediano. A\u00f1ad\u00ed el br\u00f3coli. Vert\u00ed la mezcla en una sart\u00e9n y extendela de manera uniforme. Cocin\u00e1, sin mover, hasta que la mezcla comience a espesarse ligeramente alrededor del borde, durante un minuto. Pas\u00e1 una esp\u00e1tula fina por todo el borde de la sart\u00e9n, levantando la mezcla para que la parte cruda fluya debajo de la parte cocida. Cocin\u00e1 hasta que el centro quede bien cocido pero no viscoso, aproximadamente 3 minutos.<\/p>\n<p>&#8211; Distribu\u00ed el tomate sobre una mitad de la omelette y cubr\u00edla con queso. Doblala para cubrir el relleno. Dej\u00e1 la flama a fuego bajo. Cubr\u00ed la omelette y dejala hasta que est\u00e9 bien cocida pero a\u00fan blanda, de 3 a 4 minutos.
