Bacalao, preparada y desmenuzado<\/p>\n<p>6 grandes canelones<\/p>\n<p>1 \u00bd taza de queso mozzarella rallado<\/p>\n<p>\u00bd taza de queso parmesano rallado<\/p>\n<p>3 tazas de leche<\/p>\n<p>\u00bd taza de vino blanco<\/p>\n<p>1 taza de espinaca, lavadas y picadas<\/p>\n<p>1 cebolla, finamente picada<\/p>\n<p>2 dientes de ajo, picados<\/p>\n<p>\u00bc cdta. pimienta<\/p>\n<p>\u00bc cdta. nuez moscada,<\/p>\n<p>1 hoja de laurel<\/p>\n<p>1 cdta. or\u00e9gano molido<\/p>\n<p>2 cdas. aceite de oliva<\/p>\n<p>3 cdas. de mantequilla<\/p>\n<p>3 cdas. harina de trigo<\/p>\n<p>1 ramita de cilantro, picado<\/p>\n<p>&nbsp;<\/p>\n<h3>Preparaci\u00f3n<\/h3>\n<p>Precalentar el horno a 400\u2070F<\/p>\n<p>Para preparar la salsa blanca; a fuego lento (evite ebullici\u00f3n) agregue la leche a una cacerola con la hoja de laurel y la \u00bd de la cebolla; llevar a fuego lento durante unos 5 minutos.<\/p>\n<p>En una sart\u00e9n aparte derrita la mantequilla y mezclar la harina, continuar mezclando hasta que se dore, retirar del fuego, a\u00f1adir poco a poco la leche, mientras se agita continuamente para evitar los grumos, a\u00f1adir el vino y la nuez moscada, revolver hasta que la salsa est\u00e9 espesa, reserva.<\/p>\n<p>Saltee las espinacas durante 3 minutos en la sart\u00e9n con el ajo, aceite de oliva, la otra \u00bd de la cebolla, la sal, la pimienta y el cilantro.<\/p>\n<p>A\u00f1adir el bacalao a 1 taza de la salsa blanca, 1 taza de queso mozzarella, \u00bc de taza de queso parmesano y espinacas, mezclar y verter en una manga pastelera y rellenar los canelones. Colocar los canelones rellenos en una fuente para horno, verter la salsa blanca restante sobre los canelones lleno y espolvorear con el queso restante.
